It is made with olives that are not ripe yet, harvested in October. Green Olives have much less oil, and it will give about 12% yield only, but the quality of the oil made out of green olives is absolutely magnificent and it can be told not only by a real distinctive flavour but also for the impact on consumers health.
Olives selected for Olizumo Temprana are handpicked due to the height of the soil the trees are in. They will be press within hours after the hand picking using cold pressing, to ensure the main antioxidants, vitamins, minerals of the oil remain intact.
Cold-pressed olive oil is the least refined and most natural type of olive oil. It’s made by grinding olives and pressing the paste to extract the oil without using heat or chemicals. Cold-pressed olive oils are high in quality and price.
Health Benefits
All Extra Virgin Olive oils have incredible health benefits, but not all to the same extent.
The picual variety used in our oils contains one of the highest percentages of monounsaturated fats, responsible for cardiovascular health as supported by a multitude of scientific studies.
Polyphenol Content: Our oil is also especially rich in polyphenols, natural antioxidant compounds that can help combat oxidative stress and protect cells from damage.
Tasting Note
