**D.O.P Sierra de Cazorla, FIRST COLD PRESS. 100% PICUAL OLIVES. The intense gold-green oil smells of grass with notes of thyme, boxwood, fresh mint and fennel, under-laid with fig leaf flavours. On the palate, it is first sweet, then unfold grassy-spicy notes that end in a fruity taste. Its medium intense flavour provides fresh flavour to any dish. It’s one of the healthiest olive varieties due to its high levels of oleic acid and poliphenols. It is the most suitable to be used in kitchen to cook at high temperatures, i.e. frying, long stews, dressings, dipping, to preserve meats/cheeses and products in canned.
