It is D.O.P. Sierra de Cazorla Extra Virgin Olive Oil – Picual Olive variety, Extra Virgin Olive Oil from Southeastern part of Spain.

Tasting note: Intense fruity. It has the aroma of fresh fruits, artichokes, banana, fresh cut herbs and fresh olives. The peppery & bitterness are hardly noticeable and is slightly sweet.

It is made with olives that are not ripe yet, harvested in October. Green Olives have much less oil, and it will give about 12% yield only, but the quality of the oil made out of green olives is absolutely magnificent and it can be told not only by a real distinctive flavour but also for the impact on consumers health.

Olives selected for Olizumo temprana are handpicked due to the height of the soil the trees are in. They will be press within

hours after the hand picking using cold pressing, to ensure the main antioxidants, vitamins, minerals of the oil remain intact.

Picual olive has a high polyphenol content, means it has high natural antioxidants. It has also a high content of oleic acid which helps as cardiovascular disease prevention agents.
